If you ask us what makes a really good wedding menu, it’s not fancy descriptions or complicated ideas – it’s food people actually get excited to eat.
That was the brief from Lily and Dom for their wedding with Hog Roast Ide: something rustic, generous and built around proper flavour rather than fuss. And by the time their guests started arriving to celebrate, we’d made sure that idea was already taking shape.
They’d gone for the Southern Slow Roast Menu, which – and we say this with complete honesty – is one of our favourites to deliver. Rooted in the bold, unhurried cooking traditions of America’s Deep South, it’s a spread built around depth of flavour and the kind of variety that means every single guest finds something they want to pile onto their plate.
The trio of meats did what it always does: stopped people in their tracks before they’d even picked up a plate. BBQ pork butt, whole free-range chickens with a Cajun spice rub and pulled quarter of lamb with a gentle minty note – three completely different flavour profiles, each one pre-marinated and cooked with the patience the Deep South demands. Three sauces sat alongside for guests to help themselves: a classic sweet BBQ, something tangier in the middle and a hot pepper sauce for the people who mean business.
Fifteen vegetarian and vegan guests were never going to be left out of a spread like this. For them, Hog Roast Ide’s pulled jackfruit sliders, slow-cooked in smoky sweet hickory BBQ sauce and
topped with plant-based slaw, did the job brilliantly – they were deceptively meaty in the best possible way and popular well beyond the plant-based contingent, as it turned out.
Mac and cheese, seasonal green leaf salad and sweet potato fries rounded everything out, with plenty of sauces and seasonings on the table because half measures aren’t really in our vocabulary.
120 guests, three meats, one very happy newly married couple and plates that kept coming back empty. Honestly, we couldn’t have pictured a better day.
